"The portions, quality and variety of foods being offered in the messhall have deteriorated precipitously over the past few months. The dissatisfaction and irritation over the meals is so widespread and pervasive that it's become a common matter of comment among prisoners and a boiling complaint. "Apparently in an effort to pinch a few pennies, the meals have been curtailed, half rations of sauerkraut, fewer waffles, tiny chicken, fewer clams and less meat in sauces, even rationing the pickles, for heaven sake! The food is often dangerously cold when served. It's prepared as much as five (5) days in advance and allowed to stand around. Each meal is a gamble with ptomaine. Favorites like lasagna have been scrapped in favor of macaroni with red sauce. "At the same time that prisoners are being deprived, expensive frozen crab meat and other specialties* are available to the staff. Under the new Culinary Manager the meals are even worse than before. The staff is more concerned with cutting the prisoners' diet and scrimping pennies than in preparing safe, adequare, varied and appetizing meals. Neither the kitchen help or the line servers are appropriately trained. They are dirty, rude, slo0ppy and poorly motivated. There is no reward or incentive [for them] to do a good job. "Meals are an important part of prison management and control. Our meals are foolish from a management point of view." *Not only are guards fed expensive crab, they have an elaborate salad bar, a sundae bar, speical feasts, special coffee and so forth. |
